How good is a baking sesh on a chilly winters day?! This bikkie recipe is delicious - and nutritious! The oats and wholemeal flour add fibre to each biscuit so they actually help to fill us up! The apricots and chocolate chips provide sweetness - I add honey in because it makes it crunchy and I just love the taste of honey! This recipe is so easy- literally just throw it all together and enjoy.
What you need:
1 cup instant oats
1 cup whole wheat flour
1 ½ tsp baking powder
1 tsp ground cinnamon
4 tbsp coconut oil, melted
1 tsp vanilla extract
½ cup honey (melted or use liquid honey)
½ cup dark choc chips
1 cup dried apricots, diced
Combine all ingredients in a large bowl.
Roll into balls and put onto baking paper lined baking tray.
Bake in oven at 180 degrees celcius for 12-15 minutes or until golden brown.
