Oaty Apricot Biscuits

How good is a baking sesh on a chilly winters day?! This bikkie recipe is delicious - and nutritious! The oats and wholemeal flour add fibre to each biscuit so they actually help to fill us up! The apricots and chocolate chips provide sweetness - I add honey in because it makes it crunchy and I just love the taste of honey! This recipe is so easy- literally just throw it all together and enjoy.

 

 

 

What you need:

 

  • 1 cup instant oats

  • 1 cup whole wheat flour

  • 1 ½ tsp baking powder

  • 1 tsp ground cinnamon

  • Pinch salt

  • 4 tbsp coconut oil, melted

  • 1 tsp vanilla extract

  • ½ cup honey (melted or use liquid honey)

  • ½ cup dark choc chips

  • 1 cup dried apricots, diced

 

Instructions:

  1. Combine all ingredients in a large bowl. 

  2. Roll into balls and put onto baking paper lined baking tray. 

  3. Bake in oven at 180 degrees celcius for 12-15 minutes or until golden brown.
